  * vinegar
  * lime juice (fresh)
  * a bit of sugar
  * salt
  * pepper
  * cilantro (fresh)
  * corn?
  * garlic (fresh, a bunch)
  * tiny bit of red wine or white vineger

chop everything and mix it together in the desired proportions
